- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup apple sauce (or you can just increase the oil to 1 cup)
- 2 cups sugar
- 2 1/2 cups grated & drained zucchini
- 2 teaspoons vanilla extract
- 3 cups flour
- 3 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 teaspoon salt
- 1/2 chopped walnuts (optional)
Preheat oven to 325 degrees F. Grease and flour two 8x4 inch loaf pans. Beat together eggs until light and frothy. Mix in oil, apple sauce & sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, baking soda & powder, salt and nuts; stir into egg mixture. Divide batter into prepared pans.
Topping (optional... but totally necessary!)
Combine:
3/4 cup brown sugar
1/2 cup flour
3 tablespoons butter
2 teaspoons cinnamon
1/2 teaspoon nutmeg
Sprinkle on top of loaves, slightly pressing into batter.
Bake for 60 to 70 minutes, or until done.
That sounds yummy! It's been a long time since I've made zucchini bread. I think my mom used to add in pineapple....mmmm...good memories!
